  • 20 grams Butter
  • 500 grams pumpkin, peeled, roughly chopped
  • 2 carrots, roughly chopped
  • 500 grams water
  • 1 tablespoon TM vegetable stock
  • 30 grams low-fat pouring (whipping) cream, (optional)

Recipe's preparation

  1. Place leek into mixing bowl and chop 3 seconds/speed 7. Scrape down sides of the bowl.

  2. Add butter and saute' 3 minutes/varoma/speed 1.

  3. Add pumpkin and carrots and chop 15 seconds/speed 7. Scrape down sides of bowl.

  4. Add water and stock and cook 20 minutes/100°C/speed 1.

  5. Add cream (if using) and blend 1 minute/speed9, gradually increasing speed from speed 1 to speed 9.

    I made this soup today to use up some vegies. Didn't have enough pumpkin so added a potato and extra carrot. Also only used 350 grams water and half cream/half sour cream. It was deliciius and just the thickness I like!
