Moroccan sweet potato, carrot and chick pea soup

Ingredients

  • 30 grams olive oil
  • 1 --- large brown onion peeled and halved
  • 2 Garlic cloves peeled
  • 1 level teaspoon Ground Coriander
  • 2 level teaspoon ground cumin
  • 1/4 level teaspoon chilli powder
  • 400 grams of orange sweet potato, peeled and roughly diced
  • 400 grams of carrots, roughly diced
  • 900 grams of water
  • 1 heaped tablespoon of chicken/veg stock
  • 1 can of chick peas, drained and rinsed
  • 1 tablespoon of lemon juice

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add onion and garlic, chop 4 seconds speed 5  then scrape down bowl

    Add olive oil  cook 4 minutes 100 deg soft spoon

    Add spices and cook 100 deg 2 minutes soft spoon

    Add sweet potoato, carrots, 900 grams of water, stock, MC on cook for 20 minutes 100 deg speed one

    Add chick peas,  lemon juice cook 5 minutes, 100 deg speed one MC on

    Blend 30 seconds increasing slowly up to speed 8

    Just made this and the smell while cooking was 🤤🤤and the taste was amazing. I didn't double spices and it was spot on for me as per the recipe. Will be a staple in this house now.

    Really delicious. Not a huge fan of spicy soups so just reduced the cumin by half to suit personal taste but other than that it was perfect. Thanks for sharing.

    Enjoyable, i think Maroccan flavours just arent for me. It was tasty but i think the cumin stinks 😂 but still enjoyed the soup! Was VERY easy. And i had all the ingredients at home. I think if you wnjoy pumpkin soup but want a change for something spicy, then this is the soup for you tmrc_emoticons.)

    So yummy!! I cut back a little on the cumin by about 1 tsp and added a sprinkling of garam masala.
    Served it up with a naughty dollop of light sour cream and my 3 year old and I scoffed it down!

    Delicious! I had Daikon & butternut pumpkin that needed using, so subsituted for the carrot and sweet potato. Didn't have any chilli powder so used Hot Paprika. Worked a charm. I also doubled all spices as recommended. Thanks!

    Really delicious. I blended the vegetables and then added the chickpeas and a tin of corn to add some texture.

    We have a TM31and it is a big recipe so I had to put it into a saucepan to add the chickpeas and corn.

    Both my husband and i enjoyed it and I will make it again Smile

    Yum soup and should be great for my diabetes too with sweet potato and chickpeas. Feel it needs salt to enhance the flavour. Makes a big batch of soup and needed to be careful blending such A large amount of hot soup. Will definitely make again.
