  • 1 onion, cut into 4
  • 150 grams bacon, diced
  • 500 grams potatoes, diced
  • 1 tbsp TM vege stock
  • 100 grams Milk
  • 100 grams cream
  • 500 grams water

Recipe's preparation

  1.  

     

  2. Put leek and onion in bowl chop for 10 seconds speed 7. Add bacon cook on 100 speed 1 for 4 minutes. Add water, stock and potatoes cook on 100 speed 1 for 12 minutes. Add cream and milk cook on 100 speed 1 for 10 minutes. Blend until smooth.

    Excellent recipe. I took the advice of others, sautéd the leek and onion in 20g butter with a clove of garlic. Very tasty. Also used a sprinkling of Black Truffel Salt.

    I also added salt and pepper and 20g of parmasum to the final 10 min cook
    also used skinnymixers chicken stock paste

    I added an extra leek, garlic, some salt and pepper & an extra 10 grams of cream.
    I kept the skin on the potatoes aswell.

    I added 2 cloves of Garlic with the onion & leek. then towards the end when adding the cream and milk I added 20g of parmesan. My children (6,5,2) inhaled it and told me when we have a soup dinner please can we have this one that's a winner as they aren't soup lovers 😉

    TammyR it may depend on the type of potato used. I use Ruby Lou but a friend of mine used the common white skin potato and comment thatvit wasn't as thick. Glad you enjoyed it

    So quick and delicious.  I added garlic & a dash of olive oil to saute with the onions and leeks. Subtle flavour - I might try two leeks next time or tweak it a but it's great as is for kids. Perfect for a cold winters night.

    This soup was delicious tmrc_emoticons.) 

    Put the hard parts of spring onions (instead of leeks, since I had spring onions in the fridge), in along with 2 cloves of garlic, instead of onion.  Then cooked 4 rashes of bacon (cut up) in a little rice bran oil too.  Cooked that as directed.

    Then added 4 cubed potatoes, and 4 cut up zucchinis.  Then cooked as directed.

    Blended the soup, and then mixed in the green parts of the cut up spring onions.

     

    Very impressed with the way this soup turned out, and the creaminess of it  - despite not adding butter or cream - Paleo-style.

    Made this whilst camping and it was so quick and easy. I substituted the vege stock/water with chicken stock. So yum! Thanks for posting. It was tasty, quick and super creamy. I did season with pepper when serving though.
