Ingredients

Pumpkin and Turmeric soup

  • 500 grams pumpkin, diced
  • 150 grams sweet potato, diced
  • 100 grams potato, diced
  • 1 - 2 pieces thumb turmeric root, peeled
  • 1 onion, halved
  • 1 clove garlic
  • 1 bunch coriander, save some for garnishing
  • 20 grams Evoo
  • 1 - 2 tablespoons TM vegetable concentrated stock
  • 750 grams water
  • 100 grams sour cream, garnish

Recipe's preparation

    Pumpkin and Turmeric Soup

  1. Place onion garlic turmeric and coriander in TM bowl and chop for 5 secs on speed 7

    Add EVOO and saute for 3 mins at 100C on speed 1 (MC off)

    Add pumpkin sweet potato and potato and chop for 15 secs on speed 7 (MC on )

    Add water and TM Vegetable stock and cook for 20 mins at 100C on speed 1

    Add coconut milk and blend for 20 - 30 secs goin gradually from speed 1 - 5

    Garnish with sour cream and coriander (drizzle sweet chilli sauce optional)

    Very yummy and easy to make....the mention of how much coconut milk is missing, but I put in about a cup... tmrc_emoticons.)

    In the method it says "Add coconut milk and blend for 20 - 30 secs..." but there's no mention of how much coconut milk in the list of ingredients. Can you please let me know how much coconut milk to add? Thanks
