Quick and Easy Pumpkin Soup

Ingredients

  • 1 onion, peeled and quartered
  • 2 teaspoons curry powder
  • 20 grams oil
  • 500 grams butternut pumpkin, peeled and roughly chopped into cubes
  • 2 carrots, roughly chopped
  • 1 tablespoon vegetable stock concentrate
  • 500 grams water

Recipe's preparation

  1. 1. Put onion into TM Bowl.  Chop for 5 seconds on Speed 7.

    2. Add oil, saute for 2 minutes at 100 degrees on Speed 1.

    3. Add curry powder, cook for 1 minute at 100 degrees on Speed 1.

    4. Add pumpkin and carrot, chop for 15 seconds on Speed 7.

    5. Add stock and water, cook for 25 minutes at 100 degrees on Speed 1.

    6. Blend for 20-30 seconds going from Speed 1 to Speed 9.

    Smile Delicious soup . Added a little low fat evaporated milk at the end as i thought the soup was a little thin . Made it creamy and so yum .

    Whole family loved it. I added 2 garlic cloves,  one potato,  reduced oil to 10g, 1 tbsp honey and some sour cream at the end. Amazing.  Love the curry twist. Thanks for sharing. My 2yr old toddler loved it also.

    Love this soup. Only used 1 teaspoon of curry powder as im not a spicy gal but it was perfect with 1.Im doing weight watchers so i only used 10g of oil which was 3 points total for the whole receipe. Made me 3 serves for lunches. Great

    Followed the recipe exactly and it was delicious. I dont think the curry powder needs to be reduced, it gave it the perfect amount of flavor. My 5yo did say that it was a bit spicy but it wasnt the kind of spice that would prevent him from eating it, just a warmth at the back of the tongue. Will make again, Thanks.

    I made this twice,  the fist Te I halved the recipe and added only half a teaspoon curry powder and it was perfect. 

    The second time I followed the recipe but used 1 large carrot and used a level tablespoon of curry powder. 

    Thanks for a easy recipe that can be tweaked to taste.

    Made this soup for lunch today. I reduced the amount of curry powder after reading the other posts and the soup was delicious! Even my husband who usually isn't a big fan of soup loved it. I think it was the curry that got him over the line.
