Sopa de Repollo y Zanahoria
- 280 g red cabbage, sliced, ~ 4 cups
- 200 g carrots, sliced , ~3 medium ones
- 80 g celery stalk, sliced, ~2 stalks
- 1 cans tomatoes, 15 oz, or 6 roma tomatoes
- 1 litres chicken stock
- 1/2 teaspoons dried oregano
- 1/2 teaspoons dried basil
- 1/2 teaspoons dried thyme
- 1 tablespoons olive oil
- 3 cloves garlic
- 200 g onion, chopped
- 1 sprigs parsley
- 1 dashes ground cumin
- to taste lime juice
- 1 teaspoons salt
- 1 teaspoons pepper, ground

- Chop the onion and garlic
"Blend" . Add oil and sautee in high heat for 1 minute
- Add sliced carrotis, cellery, oregano, basil, thyme, salt, pepper, and cumin- cook in medium high heat for 8 minutes
- Add tomaotes, cabagge, chicken stock and bring to a boil
- Reduce heat to medium, cover pot, cook for 20-25 minutes
- Garnish with parsley and add lime juice to taste.
Pre- slice carrots, celery, and cabbage.
