Can't go wrong with this recipe and you don't need to be exact with the quantities, either. Made it many times. Sometimes I've added too much sweet potato, another time after starting to make it I realised I didn't have enough sweet potato so added in ordinary potato. It doesn't matter if you don't have stock made, just use store bought liquid stock. I add bacon, because bacon makes everything better. I use dairy cream instead of coconut cream and have short cut the process by adding the cream after the potato has cooked and blending in the one step. Today I was going to tell a friend I also had sweet potato soup, only mine had leek, only to realise I'd forgotten to add the leek!

Awesome!
Even my 11 yr old who hates sweet potato loved this.
My only complaint is that it only just fed 4 of us, with no seconds although that was requested.
I strongly recommend that you double the recipe, as I will be doing the next time I make this.
I used coconut milk, rather than coconut cream, I suspect that the coconut cream would be too overwhelming.
I also put a dollop of sour cream in the soup to serve.
