Sweet Potato & Lentil Soup
- 30 grams butter or oil
- 125 grams onion, peeled
- 2 cloves garlic
- 40 grams Celery
- 125 grams carrot
- 250 grams sweet potato, peeled
- 75 grams red lentils, (dried or tinned)
- 1 bay leaf, (dried or fresh)
- 800 grams water
- 2 tbsp TM Vegetable stock paste

Recipe's preparation
Add onion, garlic, celery, carrot into TM bowl – chop 5 secs/Speed 6
Scrap down sides and add in oil/butter.
Cook for 6 mins/100’C/Speed 1 with MC out of lid.
Add sweet potato – chop 5 secs/Speed 6
Add, lentils bay leaf, water and stock.
Cook 15mins/100’C/Speed 2
*Remove bay leaf*
Puree soup 45 secs/Speed 9 (slowly turning dial from speed 1 to speed 9)

Great recipe, thanks. I only added in half of the lentils (dried) as im not a huge fan of red lentils, and i didn't have celery so i added some cauliflowerini i had in the fridge. I also added some salt and pepper for seasoning before blending. It was very tasty, netx time i think i might experiment with different spices.

Great flavour! I've only had my Thermomix for a few days but it was easy to make. I left out the bay leaf because I couldn't see how it wouldn't get all chopped up. But that's just me, learning. Will definitely save this recipe.

only issue during cooking was that it splattered everywhere - at the step "Cook 15mins/100’C/Speed 2". Next time I make this I will put something over the lid hole, like the varoma, to still allow steam to escape but stop the spatter.

This soup is fast easy and
This soup is fast easy and delicious, although I did tweak it a little. I added the leaves of the celery as well as the stalks also a 1/4 teaspoon of smoked paprika as I didn't have any bay leaves on hand. At the end of cooking I added a can of cannellini beans and two dessert spoons of tomato paste and I didn't give a final mix to make it smooth. The texture was good and we enjoyed the small bursts of veges. Thank you for a great recipe.
