- 1 onion, peeled and halved
- 3 cm piecepeeled ginger
- 3 cloves garlic
- 1 deseeded red chilli
- Few kaffir lime leaves
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tbsp turmeric
- 1 tsp paprika
- 500-600 g pumpkin, peeled and roughly cubed
- 500-600 g chicken stock, or water with TM stock
- 2 tbsp fish sauce
- Salt and pepper to taste
- 1 x 300 gtin coconut cream or more to taste
- Few coriander leaves to garnish.

Recipe's preparation
- Place onion, ginger, garlic, chilli and lime leaves
into bowl and chop for 10 seconds on
speed 6-7.
Add oil and dry spices and sauté for 3 minutes on Varoma temperature on speed
2.
Add pumpkin and chop for a few seconds on speed 4
until pieces are smaller. Add stock, fish sauce and seasoning. Cook for around 10-15 minutes at 100ºC on speed 1.
Puree
30 sec/speeed 4-9, gradually increasing speed from speed 4 to speed 9.
Add coconut cream and stir through. Heat for
another minute if necessary, garnish and serve whilst hot!

Fairly spicy. I used 2 kaffir lime leaves, 400 ml of coconut cream and 1 kg of pumpkin. I was happy with the consistency. I ended up adding 1 tablespoon of brown sugar which I believe improved the flavour.

I thought it was going to a thicker style soup but very runny. I only puréed for half the time but totally liquid. No thick bits. One of the spices was also too heavy for me (maybe cummin?). I added the whole can of coconut cream to drown out that flavour a little and also gave it a squirt of lime juice. It sat for 2 hours before I ate it and have to admit it was a little better after that. If I make it again, I’d add more pumpkin, less stock and maybe some brown sugar. My normal Thai pumpkin soup uses red curry paste. Could play with that a little too.

I did add a little more coconut cream than the recipe calls for so it was a more sublte in spice flavour but still yum. I added 4 or so kafir lime leaves which i think ill halve next time as it had a slight after taste that i can only think came from the leaf.
Would love to serve this with big crunchy nut bread next time YUM!

wifes new pumpkin soup recipe for life. I'm not a fan of pumpkins but there was one availabl, found this recipe and made a batch. Wife loves it, 10/10 wouldn't change a thing expect a bit more chilli.

I didn't add in the chilli, and it was still plenty spicy, so the kids weren't too keen on this. Substituted the coconut cream for light coconut milk and it was still yummy. Will definitely be using this as a go to for winter work lunches!

This is my new go to recipe for pumpkin soup. Love the fresh ingredients (no curry paste required). My favourite part is smelling all the chopped up onions chilli garlic ginger and kaffir lime leaves. Takes me back to Thailand. 5 stars.

Delicious! I added bottom 3" of lemongrass stalk and a table spoon of brown sugar, less stock and used coconut milk instead of cream (what I had in!) Also omitted paprika and coriander and left the seeds in the chilli.

The kaffir lime leaves and
The kaffir lime leaves and fish sauce bring out the Thainess of this recipe. The other spices subtly accentuate elements of the pumpkin's flavour. Nicely balanced all round I say.

Excellent recipe. I took it to friends' place and they said it was the best pumpkin soup they'd ever had! I would recommend using fresh tumeric if you can get it. Also leave the chili seeds in for some punch. When cooking in a cold house, or if you're slow like me, cook for 20 minutes minimum. Made it three times this winter. Coconut cream is essential. I used a 400 ml tin. Definitely a favourite!

Not sure about this one... I wouldn't normally associate tumeric, cumin and paprika with Thai cooking... I also thought the soup was a bit thin and was missing something (I added 2 teaspoons of brown sugar). The taste improved over time, but I probably wouldn't make this again.

I just made this. Very nice flavours, however i like my soups very thick. I used 600g pumpkin and 500g liquid. Next time ill probably use 800g pumpkin 400/500g of liquid. I only got 4 adult portions too, good to freeze for work lunches or quick dinners. Yum

Oh my this is divine. Chili does bad things to me so I omitted it but yum yum yum! I overdid the cumin but Mr 3.5 loved it. Beautiful balance of delicious ingeedients. Wasn't going to add the coconut milk but it was too spicy for us, so definitely loved it with coconut milk.

Very flavoursome. I halved the chilli, lime, stock and coconut cream it was delicious. I also used oyster sauce instead of fish sauce. For my children I would omit the chilli next time.
