THAI SWEET POTATO SOUP
- 1 onion
- 1 garlic clove
- 2cm piece ginger
- 20 grams olive oil
- 1 tablespoon red curry paste
- 750 grams sweet potato, Peeled and cut into 3cm pieces
- 650 grams water
- 1 tablespoon Vegetable Stock Conc.
- 200 grams coconut milk
- 1 tablespoon fish sauce, Optional
- 1 tablespoon lime juice, Optional

Recipe's preparation
Chop onion, garlic and ginger for 3 seconds/speed 5. Scrape down sides
Add Red Curry Paste and oil and saute 3mins/100deg/speed 1
Add cut sweet potato and grate on speed 8 for 5 - 7 seconds.
Add water and stock and cook 20mins/100deg/speed 1.
Blend for 1 minute on speed 9 and stir in coconut milk and optional ingredients for 5sec/speed 3.
Garnish with coriander.

Tried this last night, loved
Tried this last night, loved it. I had previously made a red curry paste in the thermomix and used that as part of this recipe. It has just the right amount of kick to it. I did add some more lime juice to mine upon serving but that was just for personal taste. Absoutely loved it and will make this a regular meal. Thanks!
