Tom Yum Soup

Ingredients

2 portion(s)

  • 1 tablespoon ghee, butter or coconut oil
  • 5 cloves garlic
  • 1.5 inches ginger or galangal, peeled
  • 1 fresh red chilli, halved
  • 2 shallots, roughly chopped (including greens)
  • 1-2 sticks lemongrass, bottom third, sliced lengthways
  • 8-10 cherry tomatoes, halved
  • 500 grams broth, fish, chicken or beef
  • 2 tablespoons fish sauce
  • 1-2 tablespoons maple syrup or palm sugar
  • 1 large pinch salt
  • 1 small handful mushrooms, halved
  • 5 large kaffir lime leaves, whole, gently scrunched
  • 8-12 Raw Prawns, peeled
  • 1 handful coriander, roughly chopped
  • 1 handful thai basil, roughly chopped
  • juice of 1 lime or 1/2 lemon
  • 2 tablespoons coconut cream

Recipe's preparation

  1. Add shallots, ginger, chilli, garlic and ghee. Chop 2 seconds/speed 8. Scrape down, then cook 3 minutes/varoma/speed soft. (Scrape down once throughout).

  2. Add tomatoes and lemongrass, then cook for 1 minute/varoma/speed.

  3. Add the broth, set for 10 minutes/reverse/speed 2, then add your fish sauce, salt and maple syrup.

  4. At 5 minutes to go: add mushrooms and kaffir lime leaves.

  5. At 1 minute to go: add prawns, coriander, basil and coconut cream and lime juice.

Tip

Thai herbs are full of immune-boosting compounds so great in winter or at the onset of a cold!

You can substitute left over chicken meat for the prawns.

    This soup is absolutely delicious and flavoursome. I would recommend doubling for a family of 4x. Definitely a favourite now and I'll be making it again. I followed it to the recipe and added chicken instead of prawns, as per tip. Only as I didn't have any prawns. The teens loved it. I served it with a side of rice just to extend it. I did make one small change and chopped up the lemon grass more so that I didn't get stick bits through it. Finally, I've found a soup to make in thermo that is full of flavour...

    This soup was THE BEST! I cooked it without the prawns (as I'm vegetarian), took my share out then added prawns to the rest. I substituted the fish sauce with Vegan oyster sauce. Every one in the family loved it! Thanks for sharing this recipe.

    Tum Yum soup is a favorite of my husbands so when he started feeling a cold coming on I found this recipe. It is now on our menu on a regular basis whether anyone has a cold or not.

    Absolutely great receipe! Tried it more more than twice now with a bit of tinkering, however what are the heat settings from step 3 to 5 ? Varoma down to 100 I am guessing! Tried steaming the chicken pieces in dish above bowl to try and capture the smell and flavours. U fortunately for me the chicken dried out too much which indicates over cooking ? Will try your method suggested though next time and see if it makes a difference!

    This looks like a good recipe. Please could you advise on a few points?

    Which speed do you use at stage 2.?

    At stage 3 is this still at temperature VAROMA until the end?

    Do you make everything in the TM bowl or do you actually need to use the VAROMA attachment at any point?
