Vegetable, Bacon And Risoni Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 brown onion, Halved
  • 125 grams 97% Fat Free Bacon, Roughly chopped
  • 2 cloves garlic
  • 2 carrots, Roughly chopped
  • 1 parsnip, Roughly chopped
  • 1 celery stick, Roughly chopped
  • 1 zucchini, Roughly chopped
  • 3 Cups beef stock
  • 400 grams Tin Diced Roma Tomatoes
  • 1/2 Cup dried risoni pasta

Recipe's preparation

  1. Place onion, garlic and bacon into TM bowl and chop 2 seconds/speed 7. Scrape down the sides of the bowl.

  2. Add oil and sauté 3 minutes/Varoma/speed 1.

  3. Add carrots, parsnip, celery, zucchini and chop 3 seconds/speed 7. Scrape down the sides of the bowl then chop 3 seconds/speed 7.

  4. Add tomatoes and stock then cook 15 minutes/100°C/counter-clockwise operation/speed 1.

  5. Add risoni and cook 15 minutes/100°C/counter-clockwise operation/speed 1 with MC removed and steaming basket in place.

    Delicious soup, I have made it a few times. I add a few herbs, normally Italian herbs and basil. I serve with crusty bread with a sprinkle of cheese.

    Delicious. We made a few changes to make it less 'soupy' and would cook the risoni in the basket next time as it all sank to the bottom. tmrc_emoticons.)

    Delicious! I did however make a couple of modifications as I didnt have the ingredients, I replaced the beef stock with chicken stock which I assume you meant 3 tablesppons of stock mixed with 3cups of water, and I added half of a sweet potato as I had it in my fridge. I did add to the cooking time as my risoni wasnt cooked or really even mixed through, so at the final step I gave it a quick stir with the spatula then 6min/100 degrees/Gentle stir setting So yummy and I cant wait to eat it for lunch tomorrow!
