- 250 grams crocadile meat, sliced thinly

- 1 lime
- 1 level tablespoon Peppercorns

Recipe's preparation
Place lemon peel, lime peel and peppercorns into mixing bowl and mill 1 min/speed 9.
Place the crocodile meat in a bowl and and squeeze both the lemon and lime over the meat. Add peel mixture and gently combine. Leave to marinate in the fridge for about an hour, mixing occasionally so the meat cooks and turns white.
Place shallot, chilli and garlic into the unwashed mixding bowl and chop 3 sec/speed 7.
Add avocado, lime juice and salt and pepper to taste and mix 10 sec/speed 5.

Serving Suggestions:
Canapé - Croc first and a Dollop of Guacamole on a spoon.
Canapé – A spread of Guacamole on a cracker with a Swirl of Croc on top.
Nibble – Place the crocodile meat into a dehydrator and dehydrate for a few hours to create Croc Chips. Serve with the Guacamole as a Dip.
