  • 1,5 cm fresh ginger, peeled
  • 1 piece red onion, halved
  • 50 g fresh parsley, washed and dried
  • 1 piece Raw beetroot, washed, peeled and roughly chopped
  • 1 piece lemon, juiced
  • 1 piece raw carrot, washed, peeled and roughly chopped
  • 50 g Dried currants, washed
  • 1 tbsp olive oil
  • 30 g sesame seeds, toasted
  • 1/4 tsp pepper, freshly ground

Recipe's preparation

    Salad Method
  1.         Switch TM to speed 7 and throw ginger, then onions and parsley onto the running blades. Chop for 2-3 sec.

  2.         Add beetroot, carrot, lemon juice and oil and chop 5sec/speed5. Scrape down the sides of the bowl. Chop for another 2-3 sec if finer consistency is desired.


     

  3. Add dried currants and mix 3-4sec/speed 2/counter-clockwise operation.

  4. Put the salad into the serving bolw, season with pepper to taste and sprikle with toasted sesame seed. ENJOY!

Tip

Do not use salt on this salad as the combination of ingredients work really well without it.

    Delicous, healthy and a real hit when I take this to parties! Enzymatic Salad has now become a staple in our household!  Interesting to read comment about intensity of red onion. I always use a whole smallish sized red onion and haven't personally found this overwhelming or sharp in taste, though I ensure the onion is finely chopped and well mixed. ....I also like this salad made with toasted pine nuts instead of sesame, as a variation.

    tmrc_emoticons.) great recipe! I added 60g of chopped cashew nuts with the sesame seeds as well as a couple of handfuls of mixed lettuce. It had the perfect balance of flavours and textures.
