  • 750 g aubergines
  • 1 tbsp salt
  • 20 g lemon juice
  • 50 g onions
  • 2-3 clove garlic
  • 350 g tomatoes
  • 1 tsp pepper
  • 1 tsp cumin
  • 1 tsp sweet paprika
  • 40 g olive oil
  • 40 g tomato puree
  • 2 sprig parsley leaves only, chopped
  • 2 sprig Coriander leaves only, chopped

Recipe's preparation

    Method
  1. 1. Cut aubergines lengthwise into quarters, then cut quarters into slices (1cm). Place aubergine pieces, salt and lemon juice into a bowl and mix well. Transfer aubergine into simmering basket and drain for about 30 minutes. Squeezeso that it is well drained.

    2. Place onion and garlic cloves into mixing bowl, chop 5sec/spd 6.

    3. Add tomatoes and chop 3/spd 6.

    4. Add aubergines, spices, olive oil and tomato puree, cook 15min/varoma/spd 2, place simmering basket instead of measuring cup onto mixing bowl lid.

    5. Add parsley and coriander, insert measuring cup and mix 30 sec/spd 2. Place salad into a bowl and allow to cool before serving.
