Shady's Dim Sims
- 160 g pork, diced
- 160 g chicken breast, diced
- 1/4 cabbage, roughly chopped
- 2 shallots, roughly chopped
- 2 tsp Concentrated vegetable stock, (EDC cookbook) or 1 tsp chicken stock powder
- dash sesame oil
- dash fish sauce
- 1 tsp soy sauce or tamari
- 1 egg
- salt and pepper to taste
- 1 package wonton wrappers

Recipe's preparation
- Place pork and chicken pieces into TM bowl. Put on Closed Lid setting and pulse using Turbo button for a couple of seconds. Add cabbage and shallots, egg, stock, sauces and seasoning. Pulse briefly several times till mix is minced.
Place a teaspoon of the mix in a wonton wrapper and fold the sides up around the meat while twisting around in your hand to form an open cupcake for Dim Sim style or for dumpling style, fold over wrapper and seal edges with either a bit of water or egg wash and pinch the seams together to seal.
Place dumplings in Varoma tray. Place at least 1 litre of water in the TM bowl, place Varoma unit on top. Set to Varoma temperature, speed 2 for 25 mins*.
Dumplings can be placed on baking paper on the Varoma tray.
Serve with a dipping sauce made with soy sauce and sweet chilli sauce.

Tip
I have a TM31 but I can't see any reason why you this wouldn't work in other TM versions.
Really quick and easy to get the mix together, the most time is spent putting the dumplings together.
I have cut the time back from 35mins. I wanted to make absolutely sure they were cooked but 25 minutes seems fine

i made a double batch in one go, but wouldn't recommend this as it's hard to get it all chopped up properly. Will be well worth doing two batches separately and I'll add coriander and more sauces next time too! 👍🏻

For all the many many shares and positive comments about these dim sims on all the TM cooking groups, I am surprised there aren't more reviews here. I have made them many times now and always forget that it makes a lot (which is just as well because it's hard to stop at just 4,5,6.....). Will add more than a dash of sauces next time. Something I would never have made before TM. Thank you

Made them for the second time today because I had wonto wrappers that needed using however had the pork in the freezer. I made a double batch but ran out of wonto wrappers. The theory was that I would freeze them babow....looks like I need to buy more wonton wrappers and we will be eating lots of dimsims this week lol.

Very versatile recipe. I say this because I didn't look at my wonton wrappers until after I had made the recipe, and the wrappers couldn't be used . SO, I rolled the mixture into little meatballs, fryed them for colour, then put them in a tomato base with garlic, mixed herbs and spinach. I reduced the sauce (whilst cooking the meatballs), cooked up some fettucine and voila, meatballs and fettucine. 3 fussy kids ate them so I'm happy. Am looking forward to trying them as they are intended - both steamed and deep fryed. Thanks for sharing!

My 13 yo Dim Sim expert son
My 13 yo Dim Sim expert son asked me if we could make them in our new Thermomix. I found this recipe and he was pretty happy. I made them last night for dinner and watched as my son ate 20!!!!!!!! Then went back later on for some more! Safe to say this recipe is a hit with him and even I had 3 despite normally not liking dimmies.
I made a double batch rather than freezing the meat. As I am new to this I only had a cursory glance at the Ingredients list and saw it said 12 pieces and thought it meant it made 12 pieces and knew that would never fill DIm SIm son. So I prepared double the filling. Well- after going through 2 packets of Wonton wrappers (pack of 30 each) I still have nearly as much filling left over for another day!

Sorry for the delayed repose Maddunn, I've been out of Internet contact. I have frozen them before but they are better frozen uncooked. Reheating cooked ones just doesn't taste the same. Also I'm never sure about the rules of refereezing meat if the meat used had initially been frozen and then cooked. Glad you enjoyed them!

I loved these and they were so easy! put them in a nice broth! but with the other half of the mixture i just steamed them. I am jush wondering if you can freeze steamed dim sims?? i have menu planned the rest of the week so i just wont eat them

I made these tonight. They were really nice. I don't usually eat Dim Sims, ( I grew up a vegetarain, that was my mum's idea, but married a meat eater, that was MY idea, but still pretty picky with the quality of my meat) I also don't eat pork, but subsituted it for all chicken. I have the go ahead by all the family to make them again. They are so healty, no fat. Thanks for a great recipe.
I also made the Wonton wrappers using the Wonton/Egg Roll Wrappers TM31 Recipe. Well worth the effort.

Oh no Jenny, that's such a shame! It's possible they were cooked too long. I haven't had them go gluey before but maybe different brands of wrappers have different cooking times too, I'll try cutting down the cooking time next time and repost the time if successful. I have also tried making Goyza (the Japanese variety of dumplings) recently and these had a quicker cooking time although they were steamed in a frypan not a Varoma (needs the frypan to get the crispy bottom).
There are some varoma recipes I've come across (steamed puddings in silicon muffins and my poached eggs) which used a teatowel across the top to catch the excess steam to stop the water droplets dripping back down onto the food.It may have been the a bit of excess wter giving them a water logged texture?

These are absolutely delicious, I actually deep fry them sometimes instead of steaming them - to die for!- Also try the spring rolls on this website. They are unreal as well!
