Steamed Pork and Prawn Dumplings with Homemade Gow Gee Wrappers

Ingredients

20 piece(s)

Gow Gee Wrappers

  • 200 g plain flour
  • 150 g Just boiled water

Dumpling Filling

  • 4 pieces dried shitake mushrooms
  • 250 g pork mince
  • 200 g green prawn meat
  • 2 spring onions, roughly chopped
  • 1 tsp sugar
  • 1 tbsp oyster sauce
  • 1 tbsp cornflour
  • 1/2 tsp pepper
  • 1 tbsp vegetable or peanut oil
  • soy sauce, to serve

Recipe's preparation

    Gow Gee Wrappers
  1. Place flour into TM bowl.

    With blades running on speed 4 gradually pour in water. As soon as all

    the water is added stop and check the dough. It should feel soft but firm

    enough to hold it's shape when pinched and not sticky. If needed add water

     or flour by the teaspoon to achieve desired texture.

    Mix for another 5 - 10 seconds on speed 4 to knead.

    Turn onto bench and knead lightly for 30 seconds. The result should be

    smooth and slighty elastic.

    Place dough in a plastic bag and, expelling excess air, seal tightly. 

    Set aside to rest at room temperature for a minimum of 15 minutes

    but up to 2 hours.

    Clean TM bowl. 

     

  2. Dumpling Filling
  3. Soak mushrooms in boiling water for 20 minutes until soft. Drain, remove

    stems and chop roughly.

    Place all ingredients into the TM bowl and set dial to closed lid position and

     pulse 5 to 7 times on Turbo.

    Mix for 30 seconds on speed 5 to mix well. Transfer to a bowl and set aside.

    Clean TM bowl.

  4. Rolling Gow Gee Wrappers, Filling and Steaming
  5. Turn dough onto a well floured bench and divide evenly into 20 pieces.

    Roll out into a circle approximately 10cm in diameter, they will be quiet thin.

    Keep under a damp tea towel until they are all rolled.

    Half fill TM bowl with water and cook for 5 mins at Varoma temperature

    on speed 1.

    While the water is heating place a tablespoon of filling onto the centre

    of a wrapper.

    Gather up wrapper so the sides are pleated and the filling visible

    from the top.

    Repeat with remaining wrappers and filling.

    Place 8 or 9 dumplings on the Varoma tray and place in position.

    Cook for 8 - 10 minutes at Varoma temperature on speed 1.

    Check filling is cooked.

    Repeat with remaining dumplings until all are cooked. Serve with soy sauce.
