- 500 grams chicken mince
- 2 cloves garlic
- 2 bunch coriander leaves
- 1 red chili
- 20 grams oyster sauce
- 1 tablespoon Self Raising Flour
- 1 tablespoon fish sauce
- 30 grams red curry paste, (EDC recipe is best)
- 80 grams coconut milk
Recipe's preparation
Preheat oven to 200 degrees fan forced.
Grease mini muffin tray.
Put in chili, garlic and coriander and mix 3 seconds speed 7.
Put remaining ingredients into TM bowl - closed lid position and pulse on turbo 3 times for 1 second.
Place rounded tablespoon of mixture into muffin tray.
Bake for 15 minutes.

Today I noted that each of the two bunches of coriander I bought for this recipe had three plants.
I only used two complete plants, and the proportion of coriander was perfect in the finished meatballs.
my red chilli was large, I used about 30- 40% of it, and this was just right for our tastes, and I don't think it would be too hot for children.

Very quick and very simple recipe. I actually had 3 uncooked chicken paddies that my partner wasn't too impressed with so I decided to use those for the mince. They actually only weighed 380g but I thought that wouldn't really matter. I added one red chilli with seeds but it wasn't hot enough for us so next time I'll added more.
On reading previous comments I decided to pan fry mine as well. Had to add an extra tablespoon or 2 of the self-raising flour to thicken then fried balls in peanut oil. Served with Thermomix satay sauce I had made a few weeks previously and they were amazing

I swapped the SR Flour for bread crumbs (because I didnt have any SR flour) and i loved how it turned out - gave it a bit of a crunch. i also didnt have a small muffin pan but the mixture was able to me made into balls just with a spoon so it was still easy - Next time i will add extra chilli

Loved the idea of this and was excited to give it a go for dinner. Whilst I love all the flavours, I just wasn’t a fan of the texture. I think if I were to make it again, I would swap the SR flour for corn or rice flour as it’s more traditionally used in Thai cooking and might help the texture. Then after blitzing the coriander, garlic & chilli I will just mix everything together in a bowl with my hands. Considering it’s already minced chicken, by pulsing it further it’s just turning it into a paste.

And so, so simple!
I used chicken breast and minced in thermomix, so I chopped the chilli and garlic first (did not use coriander) and then put all the other ingredients with the chopped chicken and mixed speed 7 for 8 seconds, turned out perfectly.
I also followed other comments and placed balls directly on flat tray lined with baking paper.
So delicious 😋
