The mixture may seem 'wet'
The mixture may seem 'wet' but as it has egg when you fry them they firm up. You may wish to add a little flour (with 1/2 tsp bicarb soda) to get a fuller/fluffier fritter.
These were really delicious.
These were really delicious. I did add a bit more flour to thicken the mixture up. So delicious and such a light meal. Thanks!

Not to shabby. My mixture turned out to wet to make into fritters so made them I into baby muffins and cooked them in the oven for 10mins and they turned out great. Didn't have fresh coriander so used corriander powder along with the baking powder and left over cooked corn Kernels. Will be making again for sure as baby muffins. And next time will try fresh corn kernels. Thanks for the recipy
