Thai Corn Fritters

Ingredients

25 portion(s)

  • 2 large corn cobs
  • 1 garlic clove
  • 1 chilli, (size and type to taste)
  • 2 cm ginger, fresh
  • 4 cm lemongrass, (optional)
  • 1 bunch fresh coriander
  • 45 g Cornflour - Gluten Free
  • 2 eggs
  • 1 spring onion, (cut into 3 pieces)

Recipe's preparation

  1. 1. Remove corn from cobs.

    2. Place garlic, chilli, ginger and lemongrass in TM bowl. Chop 4 sec/sp5.

    3. Add half corn and remaining ingredients. Turbo for 1-2 sec.

    4. Stir in remaining half of corn 10 secs/Counter-clockwise operation/Speed 1. Season to taste.

    5. Heat 1-2 tbl sp vegetable oil in frying pan. Cook spoonfuls of mixture for 2-3 minutes each side until cooked and golden.

Tip

Serve warm or cold as canapes with some coriander and lime mayonnaise or sweet chilli sauce.

Make fritters larger for main meal served with coconut rice and vegetables.

  • The mixture may seem 'wet'

    The mixture may seem 'wet' but as it has egg when you fry them they firm up. You may wish to add a little flour (with 1/2 tsp bicarb soda) to get a fuller/fluffier fritter.

  • Not to shabby. My mixture

    Not to shabby. My mixture turned out to wet to make into fritters so made them I into baby muffins and cooked them in the oven for 10mins and they turned out great. Didn't have fresh coriander so used corriander powder along with the baking powder and left over cooked corn Kernels. Will be making again for sure as baby muffins. And next time will try fresh corn kernels. Thanks for the recipy

    Hi Cathy, you can make own mayo (I use Best Foods store brand)and stir through freshly chopped coriander, lime/lemon juice and pepper.You could also  serve with  sweet chilli sauce or add this to mayo.

    Ooooooh the sweet chilli and coriander mayo sounds yummm. How do you make that? Do you add the flavours as you make the mayo or do you just add chili sauce and coriander to the mayo after??

    Really yum. Thanks for the recipe. I had to use a bit more cornflour to thicken but that is most likely because I used 2 cans of corn (well drained) rather than fresh. Nice flavour & really easy. I made a sweet chilli & coriander mayo to go with them.

    Delicious recipe - thanks! So great to be able to use fresh corn. I'll definitely be making these again Cooking 10 .

    I also added 1/8 tsp gluten-free baking powder to give it a bit of 'lightness', a tip I learned making felafel  tmrc_emoticons.)
