Walnut Battered Eggplant With Tomato Dipping Sauce

Ingredients

4 portion(s)

Tomato Dipping Sauce

  • 1 red onion, Peeled And Halved
  • 1 tablespoon olive oil
  • 500 grams Mini Roma Tomatoes
  • 1 teaspoon Thyme (dried)
  • 1 teaspoon Basil (dried)
  • 1 teaspoon Parsley (dried)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon brown sugar
  • 2 tablespoons chia seeds

Walnut Batter

  • 50 grams walnuts
  • 30 grams Chickpeas (Dry)
  • 2 tablespoons Corn Flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 90 grams Almond milk, See Recipe

Almond Milk

  • 35 grams almonds
  • 180 grams Filtered Water (Cold)

3-4 Lebanese Eggplants

Neutral Oil For Frying

Recipe's preparation

    For The Dipping Sauce
  1. Peel Onion and cut in half. Place in bowl and Chop for 3 sec/speed 7.

  2. Add Oil and Saute 3min/Veroma/speed 1 with MC removed

  3. Add Tomatoes and Chop 3 sec/speed 7

  4. Add all remaining ingredients and mix 3 sec/speed 2

  5. Scrape down sides and cook 10 min/80/speed 1

  6. Place in serving dish and allow to cool

  7. Clean and dry mixing bowl

  8. For The Almond Milk
  9. Add Almonds to bowl and mill 20 sec/speed 9

  10. Scrape down sides and add the filtered water blend                      40 sec/speed 7

  11. Pour through nut bag or cheese cloth and set aside.

  12. Rinse and dry mixing bowl

  13. For The Walnut Batter
  14. Add Chickpeas and Walnuts and mill 20 sec/speed 9

  15. Add all remaining ingredients, adding the almond milk last

  16. Combine 30 sec/speed 3

  17. Transfer to a shallow dish for battering

  18. Peel and slice Eggplant and coat both sides with batter.

  19. In a fry pan, heat enough of your chosen oil for shallow frying (dependand on pan size). Cook caoted eggplant until golden brown.

  20. Serve immediately with prepared Tomato Dipping Sauce

    I Was given some eggplants and butternut pumpkin from my TMclient garden after her demo today, no chemical or sprays?  Dinner was so easy, especially since my  GF and dairy free family (8 people) were coming over after I found this  amazing recipe.

    I used the eggplant, the pumpkin and zuchini...and all were delicious.  Just double thequantities.

    Using two bowls even easier and quicker for the wet and dry ingredients.
