Bacon & Cheese Rolls

  • 370 g warm water
  • 1.5 teaspoons sugar
  • 2 teaspoons dried instant yeast
  • 610 g plain flour
  • 2 teaspoons sea salt flakes

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Bread Rolls
  1. 1. Add all bread ingredients (all except bacon, cheese, 1/2 garlic & butter) to bowl Closed lid including 2 tablespoons (1/2) of the garlic paste and combine for 20 seconds on speed 2.

    2. Select the 'knead' Dough mode function and set for 6 minutes.

    3. While the dough is kneading, prepare a large bowl (preferably glass) by coating it lightly in oil to prevent the dough from sticking to it.

    4. Pour the dough out of the bowl Closed lid and into the oiled bowl. Cover with a tea towel and allow to prove for approx. 15 minutes.

    5. Lightly dust bench with plain flour before taking the dough out of the bowl and onto the pre-floured bench.

    6. Lightly knead for approx. 1 minute to release any air thats been formed while the dough was rising.

    7. Seperate the dough into 12-15 even pieces before rolling them into neat balls.

    8. Place the dozen dough balls into a casserole dish (ensure the dish has been lightly sprayed with oil if it is not non-stick or a layer of baking paper has been inserted) and cut a small slit onto each. Once again, allow to rise. This time for approx. 45 minutes. Cover with a tea towel. At the 35 minute mark, preheat the over to 180 degrees celsius.

    9. Spray the bread rolls lightly with any aerosol oil can you have available.

    10. Evenly spread the bacon/cheese/garlic mixture onto the rolls in the casserole dish.

    11. Cook for 25 minutes on 180 degrees celsius, fan forced.

    12. Remove from oven once cooked and allow to stand for approx 20 minutes before attempting to remove from the casserole dish.

    13. Allow to stand for 10 minutes before removing the bread rolls from the dish and placing onto a drying rack to prevent the bottoms becoming oily. Eat immediately, or refrigerate/freeze for later consumption.
  2. Bacon Cheese Mixture
  3. 1. Roughly cube 250g of tasty cheese and place into the bowl Closed lid. Chop for 10 seconds on speed 8.

    2. Place the 'grated' cheese aside in a seperate bowl or thermoserver.

    3. Roughly chop approx. 500g bacon rashers. Without washing the bowl Closed lid , add the roughly chopped bacon for 5 seconds on speed 6. It should resemble a 'grated' texture.

    4. Add the bacon into the bowl of cheese and combine using a spatula. Add the remaining 1/2 of the garlic paste (2 tablespoons) and stir through once again.

Tip

** If you prefer your rolls/bacon to be crunchier, prolong the cooking time for five to seven minutes.

** If you wish to speed up the proving process (or if your house is quite airconditioned) leave the mixture outside while covered in the warmth to assist the proving.

** If it is especially hot, lightly spray the rolls with a small amount of water to prevent the skin from drying out.

** If you find your bread mixture is drying too quickly, add a light spray of water and cover well with cling film or similar.

**If you prefer your bacon to be chunkier, decrease the chopping time.

**For longevity, they are able to be stored in the fridge. However, I would recommend heating for 20 seconds from the fridge before serving.

**The recipe is very forgiving, an extra 10g or so of flour/water will not adversely impact the outcome of your bread rolls.

**Once cooked, allow to dry out on a drying rack to prevent the bottom of the rolls becoming oily.
