Fair Dinkum Beef pies

Ingredients

6 piece(s)

Dough

  • 2-3 sheets puff pastry, ready-made, thawed
  • 2-3 sheets shortcrust pastry, ready made ( or 3 extra sheets Puff pastry, thawed), thawed

Beef filling

  • 180 g onion, peeled and halved
  • 20 g oil
  • 500 g Beef mince
  • 1 heaped tablespoon cornflour, and maybe a little extra for thickening later on
  • 3/4 cup liquid beef stock
  • 2 tablespoons Worcestershire sauce
  • 1 level tsp Vegemite®
  • 190 g tomato sauce/ketchup
  • Salt & pepper to taste
  • 1 egg, beaten

Recipe's preparation

    How to: Beef filling
  1. Oven 200°C, once filling has cooled.
    6-8 greased pie dishes, hand pie size.

    1. Chop onion together with the oil sp4/10 seconds.

    2. Brown Varoma/5mins/sp1.

    3. Add beef and brown Varoma/8mins/Gentle stir setting/Counter-clockwise operation.

    4. Add the 1 tblspn cornflour and blend 100°C/30secs/Gentle stir setting/Counter-clockwise operation

    5. Add remaining ingredients (except the beaten egg) Varoma/10mins/Gentle stir setting/Counter-clockwise operation. Place steaming basket on top to prevent spatter.

    6. Spoon into a large dish and cool.

    7. Cut tops (puff pastry) and bottoms (from shortcrust).

    8. Line the pie pans with the pastry of choice.

    9. Spoon a generous amount of beef filling into each case.

    10. Lightly brush the edge of each case with the beaten egg and place pastry tops on the top, crimping or pressing to seal.

    11. Bake for 20-25 minutes or until golden and browned.

Tip

*If after 10 minutes cooking, the mixture still looks very runny (bear in mind it will thicken a little on standing), mix 1 tblspn extra cornflour with a little water and cook again Varoma/1min/Gentle stir setting*

A true Aussie favourite... and this homemade version is a knockout..

Works well in an electric pie maker, and you may get more pies as they are generally smaller pies.

Serve with mash and peas, or leave the pastry off the tops and cover with mash, before baking = Cottage pies ;p

    Delicious! Very happy with this recipe....I didn't even need to add sauce! Made is exactly as per recipe and was so happy with it! Next time I'll add some mushrooms for variation! tmrc_emoticons.) Will definitely be making these again! Smile

    Absolute beautiful pie.
    i was a bit sceptical with cooking the meat in the TM as I have always browned the meat and onions on the stove, but thought I would give these pies a go and follow the recipe as written. As you can see by the results, they look and tasted amazing.
    I did get eight pies out of the mix as one of the comments mentioned, but will make six pies as suggested by Monicaih next time as I like more meat in mine.

    PS. Next time I’ll make double quantity so I can freeze some. I got 8 pies out of the above mixture and double quantity should fit easily into the TM5.
