Marscapone, Caramelised onion and Tomato Tart

Marscapone, Caramelised onion and Tomato Tart

  • 1 sheet frozen all butter puff pastry, thawed
  • 250 g marscapone cheese
  • 1/3 cup caramelised onions, store bought, or *make your own*
  • 2 spring onions (green onions), washed and chopped finely
  • 1/2 tsp dried garlic powder (or fresh)
  • 1 package mixed cherry tomatoes, halved (you may not need the whole punnet)
  • 1 tsp dried italian herbs
  • fresh parsley, chopped
  • Salt and pepper, to taste
  • extra virgin olive oil for drizzling, optional

Recipe's preparation

    How to:
  1. Heat the oven to 200°C, Pizza function if you have it, otherwise regular bake.
    Place a sheet of baking paper on an oven tray.

    1. Place the thawed pastry sheet onto the baking paper.

    2. Using a sharp knife, lightly score a border around the edge of the Puff pastry, about 1.6cm wide. Do not cut all the way through.

    3. Blend Marscapone and garlic, sp3/10 seconds, and spread within the border of the pastry sheet.

    4. Dollop the caramelised onion over.

    5. Layer the spring onions over, followed by the tomatoes, herbs and salt and pepper.

    6. Bake for 20-30 minutes until puffed and golden.

    7. Sprinkle with fresh parsley and drizzle with EVVO (optional)

    8. Serve hot/ or at room temperature with a rocket salad.
