OMG Ali's Savoury Scones

  • 2 bacon rashers, (roughly chopped)
  • 50-100 grams grated cheese, (i use parmesan or tasty but any would be fine)
  • 1 spinach, handful (optional)
  • 1/4 to 1/2 Capsicum, (optional)
  • 1 pinches paprika
  • 1 pinches pepper, ground
  • 500 grams self-raising flour
  • 250 grams Milk
  • 200 grams cream
  • dashes Milk, for brushing tops

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Preheat oven to 210 fan forced. Prepare oven tray for baking.

    1. Grate cheese on speed 8 if not already done.
    2. Add bacon, spinach, capsicum, paprika, pepper to the bowl. Chop 3 seconds, speed 5.
    3. Add flour, milk & cream. Mix 3 seconds, reverse, speed 5.
    4. Knead function for 10-30 seconds. Less is more. If the dough is together, stop kneading. If the dough is super sticky, pop some extra flour through the mc hole.
    5. Remove dough from bowl and place on floured Thermomat or bench.
    6. Flatten dough with your palm to roughly 3cm(ish) thick.
    7. Use a floured cutter, and place on baking tray. Make sure all scones are touching each other so they grow UP, not OUT.
    8. Brush with leftover milk.
    9. Pop them into the oven for 11-15 minutes (ish). Remember, all ovens are different, and cooking time is also dependant on size of scones. Scones are cooked when they're golden brown and sound hollow when tapped.
    10. Remove from oven and try to stop at eating only one!!

    Best accompanied with 'Teeth Mark Butter'. Yes, that's a thing!

    Best enjoyed fresh from the oven. Can be stored in an airtight container for 1-2 days, but I heat them in the microwave to freshen. Can also be frozen, same step as above to freshen once thawed.

    Use any savoury ingredients you like, grated sweet potato, parsley, ham, salami, spring onion, chilli flakes, etc, or leave out anything you don't like. Tweak as you please.
