Rosemary Cranberry Crackers

  • 200 g Milk
  • 1 tsp apple cider vinegar
  • 2 sprigs fresh rosemary, leaves only
  • 70 g walnuts
  • 60 g pumpkin seed
  • 200 g plain flour
  • 70 g dried cranberries
  • 80 g Flaxseed
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 30 g honey

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Put small bowl onto TM Lid and weigh in milk, add apple cider vinegar, set aside
  2. Put small bowl onto TM Lid and weigh in milk, add apple cider vinegar, set aside
  3. Put walnuts and pumpkin seeds into TM bowl, dry roast 8 mins varoma, speed 1, mc off
  4. Add flour, cranberries, flaxseed, baking powder, salt and Mix 3 sec, speed 2
  5. Add milk mixture and honey, stir 2 sec speed 4, rev or until just combined (dough it quite stiff).
  6. Put into tin, flatten and tap in on bench. Bake for 25mins or till golden around edges
  7. Remove from oven, allow to sit for 10 mins then cool completely
  8. Using sharp knife (the TM serrated knife from toolkit ideal) slice into thin (about) ½ cm slices (about 24)
  9. Place onto ungreased large tray and bake 15mins, turn and bake for another 10 or until crisp (Thermomat works well)
  10. Cool and store in an air tight container for up to one week or freeze
