Banana blueberry muffins

  • 70 g Butter
  • 3 ripe bananas, 350g
  • 150 g raw sugar, plus extra for sprinkling
  • 1 egg
  • 250 g plain flour
  • 1 tsp bicarbonate of soda
  • 1 tsp baking powder
  • 1 tsp Vanilla Bean Paste, or essence

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Banana Blueberry Muffins
  1. Place butter into Thermomix bowl and melt, 2 minutes/60 degrees/Speed 2.
  2. Add remaining ingredients (NOT blueberries) and mix 20 seconds/Speed 4 or until well combined.
  3. Add blueberries and gently mix 10 seconds/Counter-clockwise operation/Speed 2. Finish mixing by hand, if required.
  4. Pour into 12 cup muffin tray and sprinkle with a little raw sugar, then bake on 180 degrees for 15-20 minutes until golden, and a skewer comes out clean.

Tip

If using fresh blueberries, gently mix through by hand.

Substitute blueberries for raspberries if preferred.

    Smile Thank you for your recipe. I used self raising flour and as my butter was very cold i should have melted it longer however the muffins turned out great! A thick batter into the patty cake tin n cooked for 20mins on fan force 170c.
    A little trick when using frozen blueberries - sprinkle cornflour lightly over fruit to stop them bleeding into the batter.Smile

    Baked 27/07/21: Turned out perfectly. Really tasty. Very quick and easy. Followed recipe exactly. My 3 x banana's we're on the small side and only came to 300g but still a great banana flavour.

    Yum! I mixed it up a bit cause of what ingredients I had on hand. I used 2 large bananas and 100g fresh blueberries. I used 110g of coconut sugar and 40g desiccated coconut.

    Lovely muffins. I made a few slight variations.
    Put all ingredients (including frozen blueberries-my kids won’t eat them whole) in and blitzed after melting the butter. Then I mixed the flour, baking powder, bicarb for 10sec, sp4 until just combined.
    I cooked as per instructions but browned the tops a little under the grill for extra crunch.
