  • 70 grams Butter
  • 140 g Rapadura, (1 Cup)
  • 1 egg
  • 3 Bananas, ripe
  • 210 g Self Raising Flour, (1 1/2cups)
  • 160 g sultanas, 1 Cup

Recipe's preparation

    Adapted from Banana Bread Recipe on Sunbeam Sultana box
  1. Preheat oven to 180 Degrees Celsius

    Grease and line base of a loaf tin (22cmx12cm)

    Add sugar to bowl and pulverise 10-20 secs/Speed 9

    Add Butter to Bowl and chop 5sec/Speed 8

    Insert Butterfly and whip 1 1/2-2mins/Speed 4

    Remove butterfly

    Add Banana and Eggs- mix 5sec/Speed 5

    Scrape down sides of the bowl

    Add Flour and Milk- mix 10sec Speed 5

    Add Sultanas. Mix 5-10sec/Counter-clockwise operation/Speed 5

    Pour batter into tin and bake in oven for 45min or until a skewer inserted in centre of cake comes out clean (though I find I need closer to 55min but I have a very old oven)

    Cool in tin and then slice to serve

Freezes well- great for school lunchboxes

Original Recipe used Brown Sugar- I find Rapadura works OK- slightly moister base perhaps

I tend to use butter that is already softened. Can soften in thermomix if desire
