Recipe's preparation

  1. Preheat oven to 160°C and line a 22cm x 22cm (or equivalent) slice tin.
  2. Add butter to bowl and melt 2 mins/50°C/speed 2.
  3. Add flour, coconut and sugar and mix 15 secs/speed 4.
  4. Scrape down sides and repeat for another 15 secs/speed 4.
  5. Place mixture into slice tin and press down firmly and evenly.
  6. Bake for 10 minutes or until top is a light golden colour. Don't cook for too long as it will be going back in the oven later.
  8. Without washing the bowl, add all caramel ingredients and cook 22 mins/90°C/speed 4/MC off.
  9. Pour caramel over base and return to oven for a further 10-15 minutes until caramel is golden brown on top. Let it cool.
  11. Clean and dry mixing bowl.
  12. Break chocolate into small pieces and palce into the bowl. Grate 5 secs/speed 7.
  13. Melt chocolate 2 mins/50°C/speed 2 or until there's no more lumps.
  14. Pour melted chocolate over caramel layer and let it set in the fridge.
  15. Try not to eat it all at once!
