Cheesecake slice

Ingredients

Base

  • 250g package Plain sweet biscuits (I use Nice)
  • 3 tablespoons raw sugar
  • 150 grams Butter, melted

Filling

  • Rind of 1 Lemon
  • 120 grams sugar
  • 500 grams Philadelphia cream cheese
  • 50 grams sour cream
  • 2 eggs

Recipe's preparation

    Base prep
  1. Grease and line a regular size slice tray.

    Preheat the oven to 180C.

    1. Break biscuits up roughly and add to Closed lid, along with butter and sugar.

    2. Blitz sp5/ 15 seconds or until well combined.

    3. Press into prepared pan and put in the frige while preparing filling.

  3. 1. Add lemon and sugar to Closed lid.

    2. Blitz sp 9/ 15-20 seconds.

    3. Add remaining ingredients and blend sp4.5/ 20 seconds. Scrape and repeat.

    4. Spread evenly over crumb base.

    5. Bake for 35-40 minutes.

    6. Allow to cool at room temperature, then place in the fridge to chill for a couple of hours.

    7. Dust lightly with icing sugar (optional) before cutting into squares to serve.

Tip

These cheesecake aquares are delicious as is, but OMG..try them with a homemade strawberry coulis..

    Fabulous. Easy, quick and yummy. I left out the lemon and scattered cherries over the top. Mine needed an extra 10 minutes cooking time.
