Citrus Cupcakes

Cupcakes

  • 125 g Butter, Softened
  • 15 g Citrus Zest, No pith
  • 120 g sugar
  • 2 --- eggs
  • 150 g flour
  • 2 tsp baking powder
  • 65 g Milk

Citrus Icing

  • 20 g Citrus Zest, no pith
  • 120 g Butter, Softened
  • 400 g icing sugar
  • 3 tbsp citrus juice, No pips

Recipe's preparation

    CUPCAKES
  1. Preheat oven to 190oC, put 12 paper cases into standard 12 hole muffin tin.

    Add Citrus Zest and Sugar to Mixing Bowl 7 sec/spd 10
  2. Add Butter 10 sec/spd 5
    Scrape down sides 10 sec/spd 5
  3. 40 sec/spd 4 - during mixing add 2 eggs - 1 at a time
  4. Weigh in flour and baking powder 7 sec/spd 3
    - scrape down sides
  5. Add milk 5 sec/spd 3
  6. 1/2 to 3/4 fill muffin cases and bake in oven for 15 mins or until cakes spring back when lightly touched.
    Transfer to wire rack to cool - when completely cool ice
  7. CITRUS ICING
  8. Add Zest to bowl 10 sec/spd 10
  9. Add butter 10 sec/spd 5
    - scrape down sides of bowl
  10. Add icing sugar and orange juice 10 sec/spd 5

    Put into piping bag and ice cold cupcakes
