Recipe's preparation

    Corn Flake Crunch Cookies
  1. 1. Preheat oven to 160 degrees (fan forced)
    2. Mix coconut oil & coconut sugar in TM 5 seconds, speed 4.
    3. Place egg, flour, baking powder in & mix 30 seconds, speed 5.
    4. Pour 40 grams of cornflakes & all sultanas in. Mix 10 seconds, speed 5.
    5. Hand crush the remaining 30 grams of cornflakes onto a flat plate and shape cookie mixture into disc shape (approx 6-7cm in your palm) and flaten slightly, pushing into the cornflakes on both sides to create a crunchy texture on the outer layers.
    6. Place on baking tray (on silicone mats or baking paper) and bake 15 minutes (or until golden brown around edges).
    7. Let cool for 10 minutes and enjoy!

Tip

Stores well in glass jar for a couple of days

You can substitute the sultanas for your choice of extra (you could try raisins, white chocolate etc!).

Coconut oil and coconut sugar are healthier alternatives to butter and white sugar, so these cookies are a great snack for kids.

OMGoodness this recipe is similar to one that my mother made when I was a child (a good while ago).LOL. I would have to double the recipe to make it worth the effort as 10 cookies would simply not be enough for my 5 gransons. Thanks for sharing your recipe & taking me on a journey down memory lane.Smile

This recipe is so easy to follow, and a really great way to get the kids involved in the kitchen. My 4 year old LOVED smashing the cornflakes and coating the cookies herself. Not only is the recipe super easy, it is also delicious and tastes even better than the ones I used to have when I was a kid. Definitely recommend adding this one to your "must bake" list!!
