Custard filling

  • 500 grams Milk
  • 3 egg yolks
  • 50 grams sugar
  • 50 grams cornflour
  • 1 pinch of salt
  • 1 vanilla bean
  • 1 egg

Shortcrust pastry

  • 250 grams flour
  • 130 grams Butter or Margarine
  • 60 grams sugar
  • 1 egg

Crumble Topping (Streusel)

  • 300 grams flour
  • 200 grams Cold Butter
  • 100 grams sugar

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    Custard filling
  1. Put all ingredients for the custard (except the whole egg and the vanilla bean) in the mixing bowl. Scrape out the vanilla bean and add the paste into mixing bowl.

    Put the whole egg aside.
    Closed lidCounter-clockwise operation 90 ° C/ 7 min /speed 3

    Transfer into another bowl and let cool down.
  2. Shortcrust pastry
  3. Put all the ingredients for the shortcrust pastry in the mixing bowl

    Closed lidDough mode for 3 min.Wrap in cling film and put in the fridge.
  4. Crumble topping
  5. Put all ingredients for the crumble into the mixing bowl

    Closed lidDough mode 2 min add mixture into another bowl
  6. Completion
  7. Preheat the oven to 180°C /Fan Cooking

    Grease a baking tin (approx. 26-28 cm) and spread the short pastry on it. Pull up a 3 cm high edge around the baking tin.

    Put the cooled custard mixture Closed lid and add the whole egg

    Closed lid 20 sec / speed 4 add mixture on to the pastry.

    Now sprinkle the cake with the crumble dough.
    Bake the cake for approx. 35-40 minutes

    Allow to cool well before cutting.

Tip

Put a few pieces of fruit of your choice on the custard mixture and then sprinkle with crumble.
