Ingredients

Dark Chocolate & Peanut Butter Energy Bites

  • 50 g puffed rice, organic, (or rice bubbles)
  • 140 g coconut, shredded
  • 120 g Peanut Butter
  • 150 g Pure Maple Syrup
  • 50 g chia seeds
  • 1/2 tsp salt
  • 3/4 tsp vanilla essence
  • 85 g dark chocolate

Recipe's preparation

  1. Add chocolate to the mixing bowl. 6 seconds / speed 5. Repeat if necessary. Set aside. (skip this step if using chocolate chips).
  2. Add puffed rice and coconut to the mixing bowl. Mix 10 seconds / speed 8.
  3. Add peanut butter, maple syrup, chia seed, ½ tsp salt, ¾ tsp vanilla essence and reserved chocolate to the mixing bowl. Mix 45 seconds / starting at speed 1 and increasing to speed 7 gradually.
  4. Using a tablespoon measure, scoop up the mixture and mold into balls. If the mixture is a little bit too dry add another drizzle of maple syrup and mix again.
  5. Refrigerate until solid, then store in the fridge or freezer. They will last in the fridge for up to 7 days.

Tip

Note: Limit your serve to 2 – 3 balls at a time to keep within low FODMAP limits.
