Dark Chocolate & Peanut Butter Energy Bites
- 50 g puffed rice, organic, (or rice bubbles)
- 140 g coconut, shredded
- 120 g Peanut Butter
- 150 g Pure Maple Syrup
- 50 g chia seeds
- 1/2 tsp salt
- 3/4 tsp vanilla essence
- 85 g dark chocolate

Recipe's preparation
- Add chocolate to the mixing bowl. 6 seconds / speed 5. Repeat if necessary. Set aside. (skip this step if using chocolate chips).
- Add puffed rice and coconut to the mixing bowl. Mix 10 seconds / speed 8.
- Add peanut butter, maple syrup, chia seed, ½ tsp salt, ¾ tsp vanilla essence and reserved chocolate to the mixing bowl. Mix 45 seconds / starting at speed 1 and increasing to speed 7 gradually.
- Using a tablespoon measure, scoop up the mixture and mold into balls. If the mixture is a little bit too dry add another drizzle of maple syrup and mix again.
- Refrigerate until solid, then store in the fridge or freezer. They will last in the fridge for up to 7 days.
