  • 275 grams water, lukewarm
  • 5 teaspoons instant dried yeast
  • 550 grams white bakers flour
  • 1 teaspoon salt
  • 2 teaspoons milk powder, optional
  • 2 teaspoons bread improver
  • 65 grams sugar
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground nutmeg
  • 45 grams soft butter
  • 250 grams sultanas or mixed fruit
  • 4 tablespoons water, chilled (cross mixture)
  • 4 tablespoons flour, (cross mixture)
  • 2 tablespoons water, (bun glaze mixture)
  • 2 tablespoons sugar, (bun glaze mixture)

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    Instructions
    1. Add water, yeast, flour, salt, milk powder, bread improver, sugar, cinnamon, nutmeg & butter to bowl. Combine 40 seconds, speed 3. Then knead 8 minutes dough function. Dough mode
    2. Tip out dough onto an oiled surface & flatten out. Now add your sultanas & knead by hand till well combined. It will take you a few minutes to fully incorporate the fruit.
    3. Wrap in a thermomat or cover with a tea-towel & allow the dough to sit for 15 minutes before using.
    4. Now knock down the dough & divide into 80g portions. Place a tea-towel over your dough to stop them from drying out while you start rolling them into nice tight balls. Arrange on a baking tray spaced a few cms apart.
    5. Place your tray in a nice warm moist area to prove. If you are proving in a dry heat please spray your dough with water & cover your tray or the dough will dry out.
    6. Turn oven on 180*.
    7. When the buns are almost ready to bake, add the cross mixture to your bowl & mix 30 seconds, speed 4. Scrape down. Repeat. If your mix is very runny at this stage you may add a little extra flour & mix again. You want a nice thick paste.
    8. Using a piping bag or syringe draw x's on the top of all your rolls.
    9. Bake in a preheated oven at 180* for 20/25 minutes or until golden brown.
    10. Place bun glaze mixture in bowl & cook 3 minutes, 100*, speed 3, MC off. Immediately glaze your hot x buns while hot with the sugar syrup using a pastry brush.

     NotesFor regular fruit buns simply skip the cross mixture!** Safe to make in a TM31 & TM5. Always check your manual/cookbook for weight limits just to be sure. **

Tip

Proving is when you allow your unrisen dough to sit in a nice warm spot to grow. You generally wait till it has doubled/tripled in size. Dough is happiest proving in a warm moist environment, keep your dough away from direct dry heat (heater/hot oven) or draughts as it can cause the dough to skin up. If you need to prove in a condition like this spray your dough with water and cover with glad wrap or a towel so it stays moist.

There’s many ways people like proving. I prefer placing a big tray of boiling water in a confined area such as an oven (switched off), or microwave & sitting the tray/tin above it. The boiling water creates warmth and steam. If you find your water starts to lose heat you can refresh it with new boiling water.

Other places that work – warm car, bathroom after a steamy shower, on top of heat packs or water bottles, electric blanket. The list is endless!

    I did half saltanas and half choc chips, and used 125g of each, but would use much less choc next time. Maybe only 80g.

    Just came out of the oven and passed the taste test with flying colours. Light and fluffy - just perfect!

    Made HALF quantity and baked 9x70g balls of dough in a 25 cm spring form tin. Again - just perfect.

    Also presoaked fruit for 30 mins (then patted dry) before adding to dough. I needed to flour the bench lightly to work in the fruit.

    I think you could make the full recipe up and put half the dough (unproven) in fridge for fresh buns next day.

Thank you for the recipe!My notes for next time: For step 5 above - Proof in 'steam oven' 30 mins @ 40 degrees. Try and get at least 16 for a better size (I only did 13 this time so they were quite big). Baked on steam oven 'Professional Bake' for 25-30 mins. Will try and do the cross mixture in a bowl next time to save washing the TM again.

    Perfect! I just made these with my 6yo. They were easy, soft and fluffy. The spice is quite gentle which I liked (as I'm not a huge fan of cinnamon). My husband, 6yo, and 3yo loved them.

    Question: What is the benefit of adding the milk powder to the dough?

    Love these, will add extra spices as I like a more spicy flavour. I did buns approximately 45grams and made 24. Had to use another recipe as a guide for how long to let the buns prove?? Also used another members tip to soak the sultanas in boiling water to get them nice and moist👍🏻

    I’ve made these a few times and they’re delicious and amazing! I’m wanting to make up a couple of batches the day before so I can bake them fresh for Easter weekend each morning, what would be the best way to store the dough? Before proving? After? In the fridge? Use less yeast or leave recipe as is? Any tips would be appreciated! I’ve only ever made bread or hot cross buns and proved and baked immediately.

    Hi! I’ve tried to make these twice now but mine come out quit flat and quite hard - I can’t figure out what I’m doing wrong!

    Ive followed the recipe exactly so I presume it in the proving process ... they definitely get bigger by about double the size, but then once cooked they’re flat, not nice and high and fluffy like your photo. Any advice? Thank you.

    These are great! My tweaks: plain flour for bakers flour, less sultanas (150g-ish), and a bit of lemon zest to round out the flavour. I leave out the sugar glaze, and instead brush the proved buns with a bit of milk mixed with egg, right before piping the crosses. The paste is just as easy to prepare in a small bowl with a fork, and making a piping bag out of baking paper avoids the sticky clean-up job afterwards. I got 16 buns and they didn't last long!

    Like others had mentioned 80g makes huge hot cross buns. Will do 60g next time to make about 20. Other than that, they are delicious! Considering you pay $3.50 for 6, it's a huge saving.
