Lamington fingers

Lamington fingers. Dough

  • 110 grams SR flour
  • 75 grams P Flour
  • 165 grams caster sugar
  • 125 grams Butter, softened and chopped
  • 65 grams Milk
  • 2 eggs
  • dash vanilla extract

Chocolate icing

  • 325 grams icing sugar
  • 40 grams cocoa powder
  • 100 grams Boiling water
  • dash vanilla extract
  • shredded or desiccated icing for rolling

Recipe's preparation

    How to: Cake
  1. Grease and line a 20 x 30cm tray. Set oven to 180°C.
    1. Add all ingredients to theClosed lid and blend sp4/1 min. Scrape and repeat if neccessary to create a smooth creamy mix.
    2. Spread mix into the prepared tray, smooth the top.
    3. Bake for 20-30 minutes or until cooked when tested.
    4. Remove from tray and cool on a wire rack.
  2. Icing
  3. 1. Mix all in the Closed lid, and tip into a bowl large enough to coat the fingers.
    2. Roll the coated fingers in the coconut and set aside to dry.
