Ingredients

Low FODMAP Brownie

  • 100 g dark chocolate, (75% - I used Whittaker’s)
  • 55 g olivani, (any dairy free spread)
  • 80 g Maple syrup
  • 400 g black bean, canned
  • 1 tsp Baking Powder, gluten free
  • 2 --- eggs
  • 60 g frozen raspberries

Recipe's preparation

  1. Preheat oven to 150°C and line a brownie or slice tin.
  2. Add chocolate to the mixing bowl. Chop 10 sec / speed 7.
  3. Add maple syrup and olivani to the mixing bowl. Melt 2 minutes / 60°C / speed 2.
  4. Add black beans, baking powder and eggs to the mixing bowl. Mix 3 minutes / speed 4.
  5. Scrape down sides of bowl with spatula. Mix 30 seconds / speed 6.
  6. Pour mixture into tin and scatter berries on top.
    Bake for 22-24 minutes.
    Once cooled, cut into 12 pieces.

Tip

To make egg free - make flax eggs - (1 tablespoon ground flaxseed + 3 tablespoon water per egg)
