Paleo Chewy Choc-Chip Cookies ; Nut Gluten & Egg Free

Ingredients

16 piece(s)

Cookie Dough

  • 100 grams Butter
  • 80 grams Maple syrup, or Honey
  • 1 teaspoon vanilla
  • 80 grams tapioca flour, or Arrowroot
  • 60 grams Coconut Flour, not Dessicated
  • 1 tablespoon Gelatine powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 100 grams chocolate chips, Sweet Williams brand for Dairy Free, Carob buttons or Cacao Nibs

Recipe's preparation

    Dough
  1. Preheat oven to 180°c and line two trays with baking paper.

     

  2. Add roughly chopped butter to the Thermomix

    Melt ; 2min/60°/sp1

     

  3. Add Maple Syrup and Vanilla

    Mix ; 10sec/sp3

     

  4. Add all dry ingredients besides the Choc-Chips

    Mix : 10sec/sp4

     

  5. Add Choc-Chips

    Mix ; 10sec/Counter-clockwise operation/spGentle stir setting

    or untill mixed through

    The dough will be relatively wet and sticky.

     

  6. Place spoonfuls onto the baking paper with plenty of room in between as they will spread out quite a bit.

     

     

    Bake for 9-12 minutes or until golden. 

     

    Leave to cool for at least 10 minutes before moving as they will be very soft until completely cooled.

     

    I like to store mine in a container in the fridge.

    These are fab and can't even tell they are "different". Mine didn't spread out though! Thanks and will definitely be making these again .
