Pear cake
- 3 eggs
- 180g caster sugar
- 250g Mascarpone cheese
- 200g plain flour
- 50g cornflour
- 1.5t baking powder
- 1/4t bicarb soda
- dash vanilla
- 40g oil
- 3 med pears, 1.5 peeled and diced, 1.5 peeled and sliced
- icing sugar for dusting, optional
- cream and/or icecream to serve, optional

Recipe's preparation
- ~Heat the oven to 160 F/f\F and grease and line a 23cm spring form pan.
1. Add eggs and sugar to the "Closed lid" and blend sp4/20 secs.
2. Add Marscapone, flour, baking powder, bicarb, essence and oil to the "Closed lid" and combine sp5/ 30 seconds.
3. Add diced pears to the "Closed lid" and combine gently, sp2/"Counter-clockwise operation" /10 seconds, or add in by hand, using the spatula to combine.
4. Spread into the prepared pan.
5. Top with sliced pears and sprinkle with a little extra sugar if desired.
6. Bake 55-60 minutes or until cooked when tested.
7. Leave in pan 15 mins before removing sides and base.

Tip
Such a delicious cake and so easy to prepare.
Can be served warm with cream/ icecream or custard or at room temperature.
Vary the pear amount to your liking. It depends on the size of the pears and how much you like them..
I have used 4 pears in total before.
2 in the cake and 2 sliced on top.

Wow, this was sooo good. We hosted a garage sale and the helpers were queuing up to eat it, I had to cut it into slivers so that everybody got a taste. Great way to use up leftover pears
