Upside down Ginger Pear cake

  • 60 g brown sugar
  • 100 g Butter, chopped
  • 1 can --- tinned pears, Drained. Keep the juice
  • 125 g Butter
  • 140 g golden syrup
  • 100 g brown sugar
  • 1.5 tsp bicarb soda
  • 300 g Self Raising Flour, .
  • 1 tbsp ground ginger
  • --- Milk, Make up to 310g using pear juice and adding milk

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Preheat the oven to 180°C.
    Grease and double line the base of a 23cm springform tin, to prevent leakage. Or is a similar size cake tin.
    Place on a tray ready for the oven.

    Drain the pears. Reserve the juice.

    Cook butter, golden syrup and sugar on 90c, 3-5 minutes speed 2.

    Spread/pour into the prepared pan.
    Place the pears evenly over the mixture. Remember that the cake will be inverted, so make it look nice.

    Add the remaining ingredients to the Closed lid ( no need to wash) speed 4, for 30 secs. Scrape and repeat if necessary.
    You are after a slightly thick pouring consistency.

    Spread gently over the pears and bake for app. 1 hour or until cooked when tested.

    Cool in tin for 10 minutes, then carefully invert onto a serving platter, before serving with icecream, cream or both.
