Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation
- Add all ingredients (excluding cheese & bacon) to your thermo bowl in order. Combine 15 seconds, speed 3. Then knead 6 minutes dough function.
- Transfer dough to a thermomat or oiled bowl & cover with a tea-towel. Let this sit & rest for 15 minutes before working with it.
- Turn dough out onto a thermomat or oiled/floured bench & punch out any gasses that may have formed.
- Divide dough into 12 x 80g lots (you may have a little dough left). Now place a tea-towel over your dough to stop them from drying out while you start rolling them into nice tight balls. Now arrange on a baking tray spaced a few cms apart. With a sharp knife use the middle of your blade and cut a sharp slit over the top of your dough balls.
- Place your tray in a nice warm moist area to prove. If you are proving in a dry heat please spray your dough with water & cover your tray or the dough will dry out.
- Once grown to the desired size cover the top of your rolls in cheese & bacon then place in a preheated oven on 180* fan forced for 20/25 mins, or until golden brown. Take off tray immediately & place on cooling rack.

Tip
Proving is when you allow your unrisen dough to sit in a nice warm spot to grow. You generally wait till it has doubled/tripled in size. Dough is happiest proving in a warm moist environment, keep your dough away from direct dry heat (heater/hot oven) or draughts as it can cause the dough to skin up. If you need to prove in a condition like this spray your dough with water and cover with glad wrap or a towel so it stays moist.
There’s many ways people like proving. I prefer placing a big tray of boiling water in a confined area such as an oven (switched off), or microwave & sitting the tray/tin above it. The boiling water creates warmth and steam. If you find your water starts to lose heat you can refresh it with new boiling water.
Other places that work – warm car, bathroom after a steamy shower, on top of heat packs or water bottles, electric blanket. The list is endless!

Hi, I'm not the poster of this recipe, but, Thermo devotee since 2009. I feel for you, as yes, it is vital for Varoma to have water in the bowl for it to steam up into the veggies.
I usually work with a minimum of 500 ml. There is actually a bit of run down of it in the front of the 'Every Day Cooking' (EDC as you'll see it referred to on this forum). Amount of water in bowl depends on what and how many veggies, or whatever you've got. I also often put some pepper, salt, garlic, stock, or chilli in the water, depends what I've got on top.
