Recipe's preparation
-
- Place garlic cloves in bowl & chop 3 seconds, speed 9
- Add water, yeast, bakers flour, oil & salt to bowl. Combine 15 seconds, speed 3. Then knead 6 minutes dough function.
- Transfer dough to a thermomat or oiled bowl & cover with a tea-towel. Let this sit & rest for 15 minutes before working with it.
- Turn dough out, divide into 6-8 portions & roll into balls. Cover with a tea-towel to stop the dough from drying out.
- On a well floured bench take one of the balls & roll/flatten out to the size of your hand. Place some fillings in the centre & bring the edges up & pinch together so the fillings are enclosed tightly in a ball.
- Turn your dough over so the seam is facing downwards, now roll out nice & thin.
- Cook in a dry pan on a medium heat, once done lather on both sides with some ghee/butter.
- Continue the process until all naan breads are cooked.

I have made this twice now
I have made this twice now and perfect both times. Only had to make it twice because after I divided the mixture into 6-8 pieces the balance went into the freezer for the next time I needed Naan. Doesn't take long to thaw out on the bench and is just as good as when freshly kneaded. A tiny bit of ghee in with the spinach and cheese keeps it from being dry.

I'm not sure why, because I measured all ingredients as stated, but my dough was extremely sticky and very difficult to work with. Adding flour after the 15 mins just seemed to make the naan floury. I think it definitely needs more garlic. I WILL try it again though.

This recipe is wonderful, the naan is so wonderfully soft. Do not be afraid to put more cheese in the centre. When you lather with butter at the end, I would make it garlic butter as we are garlic freaks!
