Italian Semolina Bread

Italian Semolina Bread

  • 1.5 tsp dried instant yeast
  • 330 g warm water
  • 10 g honey
  • 250 g semolina flour, (Fine semolina) See photo
  • 1 tsp salt
  • 180 g Baker’s Flour
  • 1 tsp bread improver, Optional
  • 1 tsp malt barley, Optional
  • 2 tablespoons sesame seeds, + extra for sprinkling

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    How to:
  1. 1. Add all the ingredients in the order listed.

    2. Combine 15 secs/sp5. It will be a sticky mixture.

    3. Knead 5 mins.

    4. Wrap in a thermo mat or place in a greased covered bowl and prove until double.

    5. Tip onto a floured surface and punch down to release all the gases.

    6. Shape into a free form loaf and place on parchment paper on a tray and cover.
    Or to fit in a large greased bread tin and cover.

    7. Rest until double or mixture just crests the top of the tin.

    8. Spray with water and bake in a preheated 220°C oven for 15mins.

    9. Reduce temperature to 190°C for a further 10-15mins or until cooked.

    10. Cool on a wire rack immediately.

    Sorry for the late reply.
    Its quite ok to leave both these ingredients out. I feel they enhance them texture of the bread but not crucial to the baking.

    Smile Before i begin i would like to know - Firstly what happens if i don't use the Bread Improver and Malt Barley? and - Secondly what substitutes would you recommend (if any) for these afore mentioned items please? Thank you
