Jumbo White Bread Loaf - Thermomumma

900 g

  • 360 grams water, lukewarm
  • 1.5 teaspoons sugar, optional
  • 2 teaspoons instant yeast
  • 600 grams white bakers flour
  • 2 teaspoons salt
  • 2 teaspoons bread improver
  • 1 tablespoon oil

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    Instructions
    1. Add all ingredients to your thermo bowl in order. Combine 15 seconds, speed 3. Then knead 6 minutes dough function.Dough mode
    2. Transfer dough to a thermomat or oiled bowl & cover with a tea-towel. Let this sit & rest for 15 minutes before working with it.
    3. Turn dough out onto a thermomat or oiled/floured bench & punch out any gases that may have formed.
    4. Shape dough & place into your jumbo 900g  bread tin
    5. Place your tin in a nice warm moist area to prove until it has reached the top of your tin. If you are proving in a dry heat please spray your dough with water & cover your tin or the dough will dry out.
    6. Once grown to the desired size place in a preheated oven on 180* fan forced for 30 mins, or until golden brown. Take out of tin immediately & place on cooling rack.

     Notes** Safe to make in a TM31 & TM5. Always check your manual/cookbook for weight limits just to be sure. **

Tip

Tips: Using Your Bread Tin Lid

Place your lid on just before it reaches the top of tin (bottom right photo). 

Make sure to leave some space as the dough will expand slightly from the initial warmth of the oven before it actually starts cooking.

Slide your handle on first, otherwise if you do it from the other end you will rip the top off your loaf off when trying to remove the lid.

5/10 minutes prior to the loaf being cooked take off the lid to allow some colour on the loaf. If you are after more colour once this time is up, you can take out of your tin & place back in your oven for a little while longer.

    Such a great and easy recipe to follow. I make this bread 2/3 times a week for the family. Never had a problem. Works every time. We have made with and without sugar. We no longer add the sugar to keep things healthier.

    Better than Baker's. That's what my husband said. Followed the recipe and proved in the steam oven 35 degrees for 30 mins. Baked at 180degrees on Professional Bake for an extra 5 mins (35 mins all up) as it didn't have the hollow sound I was after. Had to spin it around as it was burning faster at the back (my oven, nothing to do with recipe)

    I've always been a bit scared to make bread but finally gave it a try with the recipe. I only had a very small loaf tin, so I put a bit over half the dough into the loaf tin and shaped the rest into bread rolls (about 90grams in each).

    They turned out perfect!! I can't believe how light and fluffy the rolls are. We had homemade burgers with them straight after I baked them. The loaf oaf looks great too!


    I will be using this regularly! Now I just need to get a jumbo loaf tin. Thanks for a great recipe!
