    Recipe is created for
    TM 5
Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    Instructions
    1. Add all ingredients to your thermo bowl in order. Combine 15 seconds, speed 3. Then knead 6 minutes dough function. Dough mode
    2. Transfer dough to a thermomat or oiled bowl & cover with a tea-towel. Let this sit & rest for 15 minutes before working with it.
    3. Turn dough out onto a thermomat or oiled/floured bench & punch out any gasses that may have formed.
    4. Divide dough into 12 x 80g lots for lunch rolls, or 10 x 100g lots for hamburger rolls (you may have a little dough left). Now place a tea-towel over your dough to stop them from drying out while you start rolling them into nice tight balls. If you would like them seeded simply push your dough ball into a dish of seeds. Now arrange on a baking tray spaced a few cms apart.
    5. Place your tray in a nice warm moist area to prove. If you are proving in a dry heat please spray your dough with water & cover your tray or the dough will dry out.
    6. Once grown to the desired size place in a preheated oven on 180* fan forced for 20 mins, or until golden brown. Take off tray immediately & place on cooling rack.

Tip

Proving is when you allow your unrisen dough to sit in a nice warm spot to grow. You generally wait till it has doubled/tripled in size. Dough is happiest proving in a warm moist environment, keep your dough away from direct dry heat (heater/hot oven) or draughts as it can cause the dough to skin up. If you need to prove in a condition like this spray your dough with water and cover with glad wrap or a towel so it stays moist.

There’s many ways people like proving. I prefer placing a big tray of boiling water in a confined area such as an oven (switched off), or microwave & sitting the tray/tin above it. The boiling water creates warmth and steam. If you find your water starts to lose heat you can refresh it with new boiling water.

Other places that work – warm car, bathroom after a steamy shower, on top of heat packs or water bottles, electric blanket. The list is endless!

  • These rolls are sooo good! I didn't add the sugar...

Submitted by Jenny Leighton on 11. July 2017 - 14:12.

These rolls are sooo good! I didn't add the sugar and it didn't need it. So tasty! I also proved my rolls in the oven (as per the tip) with boiling water in a dish on the lower rack with the prepared rolls on a tray with a tea towel over them on top rack. This really helped with the rising and softness of the rolls. I did this for at least an hour until they doubled in size -I changed with boiling water a second time. (Obviously you don't turn the oven on while proving them!) I'll be making these again for sure. My kids loved them for lunch!

    Submitted by tilly48 on 7. July 2017 - 21:26.

Made these bread bread rolls as a birthday treat ( 1 off ) for my partner who is on LCHF. He was in heaven, he said nothing to do with not having bread for 5 months they were brilliant. They where so easy to make used apple cider vinegar as bread improver, worked perfectly. Can't wait for next birthday.

    Submitted by Jyipp on 28. November 2016 - 23:40.

Made this a couple of times and both times they have had a hard crust and too dense on the inside. I proved for about 1.5 hours both times in an oven with a tray of hot water. Any tips on how to improve the results?
