APRICOT SQUARES Healthy 2 ingredient

Ingredients

  • 150 grams dried apricots
  • 200 grams Desiccated Coconut

Recipe's preparation

  1. Add both items into bowl and process on speed 10 for 1 minute (scrape sides) then process speed 10 again for 1 minute.

     

    Check consistency, when squeezed together it should be very moist as the oils from the coconut are starting to turn into coconut butter. This is what binds it.

     

    Press into lined loaf tin. I used the back of the MC to help. Sprinkle with extra dedicated coconut.

     

    Refrigerate to set. Then cut once cooled.

    I'm not sure what happened but these weren't yummy like the comments suggested, maybe I did something wrong? They were very dry and bland and not enjoyable. . I'll stick to my usual recipe which has dates & coconut oil as well.

    Thank you so much for this recipe. I made this in my Thermomix a few weeks ago and wasn't sure which speeds/time I should be using. Mine was very oily and I wasn't sure if that was the consistency that it should be. Love it.

    Hi, Edwards family. Sounds like you need to process for longer, the oils needs to release out of the coconut, as this is what binds it together. To test, You need to squeeze it together between your fingers and if its oily it binds together and it's ready. If its not process for a further 30 secs to 1 min on speed 10, then check again. Continue to do this untill the oils have released. Hope this helps.

    Made this for my 3yo who loves the store bought version.  I offer it sparingly as it contains a high amount of sugar.  This version tastes great without the sickly sweetness.  Will definitely make again.  Thanks!!
