CHOC ZUCCHINI CUPCAKES

  • 3 eggs
  • 2 medium zucchini, Shredded
  • 240 g Plain Greek Yoghurt
  • 150 g raw sugar
  • 90 g Rice Malt Syrup / Honey
  • 330 g Whole Wheat Flour
  • 40 g cacao powder
  • 2 tsp vanilla essence
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp sea salt

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    CHOC ZUCCHINI MUFFINS
  1. Preheat oven to 170° C
  2. Line baking tray with cupcake/muffin papers
    (This will make roughly 24 x Cupcakes or 15 x Muffins)
  3. Combine all ingredients into Closed lid and mix
    Sp
    eed 5, 30 seconds. Counter-clockwise operation Reverse
  4. Spoon mixture into cupcake/muffin casings, leaving space to rise
  5. Place tray into oven and bake:
    12-15 minutes for cupcakes
    15-20 minutes for larger muffins.
