For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Chop the chocolate into small pieces, weigh it in the TM bowl, pulse a few times with the turbo function, and finally remove the mixture from the bowl and set it aside.
  2. Weigh the sugar and milk into the mixing bowl and bring it to a boil at 100°C for approximately 5 minutes, time will depend on the temperature of the milk at the start.
  3. Add blitzed chocolate and cocoa powder and stir for 10 sec/speed 4.
  4. Pour the mixture into a flat tray and let it come to room temperature before freezing it. Alternatively, you can use an ice cream machine to freeze the mixture. If you're using the freezer method, once the mixture is frozen, take it out and chop it into small pieces. Then, put the chopped mixture back into the TM bowl and blend it on speed 9 until it's whipped up like ice cream. The spatula can be used if needed. Serve immediately.

Loved this recipe - and so did our lunch guests! I actually turbo'd some hazelnuts and added them to the mix at the end - magnificent!

Thanks for putting this recipe up it was a big hit at our cooking class was looking for something chocolatey for the sorbet and this so filled the brief!

It wizzed up so pretty in the bowl and is on our Easter menu at home... thanks for the tip about the cream  although it is quite decadent as it is.

    Happy Easter!
