Mulberry Crumble Cake

Cake Batter

  • 1 apple, Peeled, Cored and quartered
  • 100 grams Butter
  • 170 grams SR flour
  • 100 grams sugar
  • 40 grams Milk
  • 1 teaspoon vanilla essence
  • 2 eggs
  • 300 grams berries, mulberries, blueberrys, or your choice. Fresh or frozen

Crumble

  • 100 grams caster sugar, or raw sugar milled in first step
  • 75 grams Butter
  • 170 grams SR flour
  • 20 grams water
  • 1/2 tablespoon vanilla essence

Recipe's preparation

    Cake Batter
  1.  Preheat oven to 180 degrees

    Place apple in TM bowl and chop 2 seconds on speed 7

    Add remaining batter ingredients (except berries)  and mix 30 seconds on speed 5.

    Pour mixture into greased 20cm spring form tin. 

    Top with berries

     


  2. Crumble
  3. Place all ingredients for crumble into TM bowl and mix for 5 seconds on speed 5 or until mixture is like crumbs. Sprinkle crumble evenly over berries.

    Bake for approx. 50 mins. Test cake with a skewer to ensure skewer comes out clean.

     

     

     

    Sprinkle with icing sugar to serve.

Tip

You can use any fresh or frozen berries for this recipe. If using frozen berries, allow them to thaw and drain any excess juice before using. Blueberries work well while still frozen.

    Yummy. I made this in a TM5. Cut back the sugar in the batter to 80g and in the crumble to 75g. I also replaced the water in the crumble with a 60g egg. I didn't cut the stalks off the mulberries and you couldn't really notice. I will make it again. Thanks
