Ohhh Emmm Geee Caramel Banoffee Pie

Ingredients

10 portion(s)

Base

  • 1 package milk coffee / marie biscuits
  • 150-180 grams Butter

Caramel

  • 70 grams water
  • 140 grams full cream milk powder
  • 70 grams Butter
  • 100 grams brown sugar
  • 70 grams golden syrup

Topping

  • 1-2 Sliced Bananas, to cover caramel
  • 400 grams cream, Pure or thickened
  • 1-2 tbsp icing sugar, to your preference (not necessary, i don't personally sweeten mine)
  • 1 teaspoon vanilla essence
  • 1 Flake

Recipe's preparation

    Base

    Grease pie/flan dish & set aside

    Melt butter (start with 150gm) 1min 30sec 50 deg sp 3

    When fully melted, add biscuits whole. Mix 10 sec sp 6

    Scrape sides and repeat. The consistency should be that when pinching some together it actually stays together. if not, pop some more butter in until that consistency is reached.

    Press base mix into tin (base and sides) and pop in fridge.
  2. Caramel
  3. I don't rinse bowl at this point.

    Pop all ingredients in bowl and cook 22 minutes 90 deg sp 4. Scrape down sides and give it a stir 5 sec sp 3-4

    Once cooked, pour over base, smooth and return to fridge.

    Add 200ml milk to bowl and cook 4 minutes 80 deg sp 4 if you'd like a hot caramel while the slice cools, if not, rinse and dry bowl.
  4. Topping
  5. When caramel is cool and you're ready to serve, slice bananas and arrange over caramel.

    Add cream, vanilla and icing sugar(if using) to bowl, 'whip it good' using butterfly, sp3. (thickened cream is 30 seconds sp 3). Keep a close eye on it & don't overbeat. Spread over banana and sprinkle with crushed flake. You're welcome tmrc_emoticons.;-)

    If wanting to make ahead of time, make the base and pour the caramel over, do the banana & cream fresh before serving.

    Caramel quantity can be doubled if using a large pie dish / tin. No extending of time necessary.

Accessories you need

Tip

You can use whichever biscuits you prefer, Marie or milk coffee biscuits really balance the banoffee. Butternut snaps or choc ripple is yummy, but cut into small pieces as it's super rich! 

Full cream milk powder DOES render the BEST result (light/skinny milk powder may not thicken the caramel as well).

Milk Powder is imperative to this recipe, you can not successfully leave it out. I would also suggest NOT attempting to use milk (I've not tested it personally so can not guarantee result, nor offer advice)

I use real block butter, not spreadable (it doesn't need to be expensive, home brand/black & gold is A OK). Spreadable will contain added oils which will impact the consistency and thickness of your caramel (this is super important as it won't be baked in the oven to thicken further)

If using ingredients straight from the fridge, or you'd like a thicker caramel, please extend the cooking time of your caramel by 5-10 minutes, you could also remove the MC too (you won't overcook your caramel)

When making this recipe, you are making your condensed milk and caramel in 1 step which is why there is no condensed milk added.

    Ok reading all these comments makes me think that something was amiss with my attempt followed recipe to a tee but my caramel did not set it became a sloppy mess so stirred all up in bowl and froze so not to waste it.now will have banoffee squares stead of pie

    This Tate’s amazing ! So easy too! I took this to a bbq and was an absolute hit ! I had a pie flan so I found the base was hard and got stuck . Might try a different base next time ? Also next to,e I would double the cream as the layer on my pie was quite this . Thanks so much

    i have made this many times in the past and the caramel was always perfect! tonight I am on my third attempt at the caramel after realising you may have doubled the water but not the rest of the ingredients, anyway third times a charm - fingers crossed

    REALLY yummy, except looking at the picture i realise my mistake now. I only spread the biscuit crumb over the base, not up the sides too. Opps. So was a bit oozy! My fault. As others suggested, i didn't add much sugar to the cream, left the sweetness up to the caramel filling. Also added some salt flakes to the caramel which was lovely. Would definintely recommend!

    Made this for Christmas dessert and there was only one tiny piece left. Everyone loved it! So easy to make, I wish I had made it sooner! Definitely making again.
    P.S - I used the choc ripple biscuits in my base and it went great with the rest of the pie.

    5 STARS!!! I have been meaning to review this recipe for months. Last night was the third time I've made this banoffee this year. It was the first banoffee I ever made. Ali's recipe is so easy to follow and is the yummiest I banoffee I have ever tasted. My friends and family can't get enough. I have used the coffee biscuits and ginger nut as a base. Both turned out fantastic. The gingernut gives an extra flavour and as Ali writes in her recipe its quite rich so you just might want to slice the banoffee smaller to serve. I used half the amount of icing sugar in the cream as the pie is already sweet enough for my tatse. Thanks Ali for such a fantastic, totally fool-proof recipe!

    Very nice!! I really like the idea of making caramel from basic ingredients rather than using skim milk powder. I tried to tone down the sweetness by using less icing sugar with the cream and digestive biscuits for the base, worked quite well. Also rice syrup seems to yield good results for the caramel as a substitute for golden syrup.

    Sooooo good. Thanks for sharing. I've made this a few times now with brown sugar and dark brown sugar and my personal preference is the caramel is better using dark brown sugar. Either way the caramel is sooooo good.

    Absolutely divine Ali. Thank you so much! Everyone loved it. I didn't have any biscuits on hand for the base so I made Anzac biscuits from a recipe on this community and used 250g for the base. Very sweet, I'll try the bought bikkies next time. Great instructions.

    This recipe is so quick and easy and oh my God absolutely delicious. Have made a few times now and have reduced sugar and syrup a little as I personally found it to be very sweet but with the reduced sugars still yum yum.

    For the coffee lovers - I made the hot caramel with a little less milk and added it to my shot of coffee...OMG that was amazing too!!!

    Next time I'll make a double batch of the caramel so I can serve caramel lattes with it.
