Steamed individual Sticky Date Puddings

Sticky Date Pudding

  • 210 g Dates, seeded
  • 260 g Boiling water
  • 1 tsp bi-carb soda
  • 100 g brown sugar
  • 60 g Butter
  • 2 eggs
  • 140 g SR Flour, or Plain with 1 tsp of baking powder

Caramel Sauce

  • 140 g brown sugar
  • 100 g Butter
  • 250 g cream
  • 1 tsp vanilla essence
  • 6

Recipe's preparation

    Sticky Date Puddings
  1. Combine dates, boiling water and soda in TM bowl. Let stand for 5 minutes

    Add sugar and butter to mixture and process on speed 6 - 7 for 8 seconds until dates are chopped.

    Scrape down and add flour first, then eggs and and process on speed 4 - 5 for 5 seconds at a time until combined.

    Place silicon patty pans or muffin moulds into varoma and tray if required.

    Pour batter  into 12 silicon patty pan moulds or 6 Texas muffin moulds to half full.

    No need to wash bowl. Add 1 litre of water and steam puddings for 22 minutes, Varoma, Speed 2.

    Clean bowl, then start sauce, you can keep Varoma on top to keep warm while sauce cooks, or alternately cook sauce first and reheat when ready to serve puddings!

     

     

     

  2. Caramel Sauce
  3. Place all into TM bowl and cook on 80C, speed 1 for 2 minutes unti butter has melted.

    Cook for another 3 minutes, speed 3-4. Sauce will thicken on standing.

    I cooked mine for 22 minutes but several of the middle muffins weren't fully cooked. I'll cook longer next time.
    Taste really good though.

    I halved this recipe, and it served 4 of us. There were 2 little puds each. They cooked at the same time as I cooked the rice for our main meal. Once the rice was done, I cooked the sauce. I will definitely be doing this one again and again!

    Great recipe i used 1/2 rapadura and 1/2 brown sugar for the pudding it taste good so i may try all rapadura next time! I also remove the seeds in dates and I only had medjool dates so they worked awesome normally i would just use the regular dates!

    Thus was so good that when i had to take asome medication  after dinner, i mixed a cpl of tablespoons of the caramel sauce with the little bits of cream left in the empty container of dollop cream and used that to swallow my tablets - incredibly gluttonous i know but what can you do when it is sooooo delicious? Hubby says the puddings were the softest he has ever had. Will be making this over & over again.

    These were seriously amazing. So light and fluffy and made a huge batch. I used 4 ramekins in the bottom and then smaller muffin tray in the top of my varoma and still had enough mixture to make another batch in the muffin trays. 

    definately let the sauce stand for a couple of minutes to thicken up too, and maybe next time I might add a couple of salt flakes for salted caramel effect Just to mix it up.  Big Smile

    Lovely dessert, and the sauce is delicious. I used gf plain flour and put the mixture into silicon muffin trays. I made 12 and cooked it in the oven at 160 fan forced for 25mins. Make sure you let the sauce stand for a few minutes. It really does thicken! Thanks for sharing, the whole family loved it. Love

    Divine! I only had prunes not dates and halved the recipe. Still marvelous. I cooked in varoma dish, no tray on top, in ramekins. I was careful when removing varoma lid not to spill condensation on puddings. I just did in two batches instead of using tray in varoma and cooking on two levels, turned out perfect, cooked extra five minutes too.

    Light and fluffy but next time I might try and put in more dates as I felt it needed a bit more flavour.  I cooked the sauce on the stove while the sticky date was steaming and that worked out well.

    I halved the recipe and put it in 3 ramekins...we ended up eating one each and then sharing the third! LOL seriously good- so light!

    Not sure how others got so many cakes from the recipe - must be pretty small cakes!

    Delish. Made 1/2 the batch & made 5 large muffin sized puddings. Was a bit difficult getting the silicone muffin tray to fit in the varoma so 3 of the 5 weren't actually cooked but the two that were cooked were yummy. If I used ramekins next time would they cook as quickly?
